Recipe: Adult Version of Buttered Noodles


If you were a picky eater like myself when you were little, this is for YOU! Long story short, I was headed home the other day and I didn't know what I wanted to make for dinner. I threw a few ingredients I knew I had into Google and in comes a recipe that actually sounded amazing. I altered it a little as I went and bam - I made a delicious and super easy pasta recipe that won't leave you with a ton of dishes!


Ingredients:

Pasta (I chose Spaghetti noodles but you could use anything)

1 tbsp butter

3 garlic cloves minced

6 cups spinach

1/2 cup parmesan cheese (grated)

1 dash of salt and pepper (to taste)


Instructions:

  1. Add pasta to a large pot of boiling salted water and cook until al dente (check the box for specific time based on what noodles you are using).

  2. Once the pasta is cooked, take 1 cup of pasta water and set it to the side before draining the noodles. Set the pasta aside but return the pot to the stovetop. I just kept the noodles in the strainer for the next part.

  3. Melt the butter in the pot over medium heat. Once the butter is melted, add the garlic and cook for 2-3 minutes. Add in the pasta and spinach and gently toss until the spinach leaves are wilted. If the pasta is dry, add the pasta water you saved.

  4. Stir in 1/4 cup of parmesan cheese (I used more like 1/2 cup because you can never have enough). Toss until all the ingredients are combined.

  5. Season with salt and pepper on top and garnish with additional parmesan cheese before serving immediately.
